We always break the yolks on our duck eggs, whether we're frying or scrambling, so as to get them to cook more. The yolks are so huge - I think a duck egg yolk is as much mass as the edible part of an entire chicken egg - that they are still raw in the middle by the time the whites are about to dry out from overcooking.And they are yummy! This year we're doubly fortunate because a neighbor is selling his extra-fresh and natural chicken eggs in his driveway. So we have great, locally grown eggs of two kinds available!
